- 2 cups shredded chicken (leftover or rotisserie chicken works well)
- 1 cup BBQ sauce (use your favorite brand for the best flavor)
- 1 cup shredded cheddar cheese (or a mix of cheddar and Monterey Jack)
- ¼ cup sour cream (optional for topping)
- 2 green onions, chopped (for garnish)

Prepare the Potatoes
Preheat your oven to 400°F (200°C).
Scrub and dry the potatoes, then poke each potato several times with a fork to allow steam to escape.
Rub the potatoes with a bit of olive oil, and season them with salt and pepper.
