  • 1 cup stone-ground grits
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded sharp cheddar cheese
  • 2 tablespoons unsalted butter
  • Salt and pepper to taste

For the Shrimp:

  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon Cajun seasoning
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 1 small onion, finely chopped
  • 1 bell pepper (red or green), finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional for extra heat)
  • 1/4 cup chopped green onions
  • Fresh parsley, chopped (for garnish)
  • Juice of 1/2 lemon

Making the Grits:

  • Prepare the Grits Base:
    In a large saucepan, bring the chicken broth to a boil. Slowly whisk in the grits, reducing the heat to low. Cook, stirring frequently, until the grits are thick and creamy, about 20-25 minutes.
  • Enhance the Flavor:
    Stir in the heavy cream, shredded cheddar cheese, and butter. Continue to stir until the cheese and butter are fully melted and incorporated. Season with salt and pepper to taste. Keep warm.

Preparing the Cajun Shrimp:

  • Season the Shrimp:
    In a medium bowl, toss the shrimp with the Cajun seasoning until evenly coated.
  • Sauté the Vegetables:
    Heat the olive oil and butter in a large skillet over medium-high heat. Add the chopped onion and bell pepper, sautéing until softened, about 5minutes. Toss in the minced garlic and sauté until fragrant, about one minute.
  • Cook the Shrimp:
    Place the seasoned shrimp into the skillet. Cook until they become pink and opaque, approximately 2-3 minutes on each side. Transfer the shrimp to a plate and set aside.
  • Make the Sauce:
    In the same skillet, add the chicken broth, heavy cream, smoked paprika, and cayenne pepper (if using). Mix thoroughly, making sure to scrape up any browned bits from the bottom of the pan. Allow the mixture to come to a simmer and cook until it thickens slightly, about 5minutes.
  • Combine and Finish:
    Return the cooked shrimp to the skillet, tossing to coat in the sauce. Stir in the green onions and a squeeze of fresh lemon juice.

Bringing It All Together:

  • Plate the Dish:
    Spoon a generous portion of the creamy grits onto each plate. Top with the Cajun shrimp and sauce mixture.
  • Garnish and Serve:
    Garnish with chopped fresh parsley and an additional sprinkle of green onions for a burst of color and flavor.
