Main Ingredients:
- 1.5 lbs sirloin steak (or ribeye, flank steak) – cut into 1-inch cubes
- 3 tbsp butter (unsalted)
- 2 tbsp olive oil (or avocado oil)
- 4 garlic cloves (minced)
- 1 tsp salt (adjust to taste)
- ½ tsp black pepper
- ½ tsp paprika (smoked or regular)
Optional Add-Ins:
- 1 tbsp fresh rosemary or thyme (chopped)
- ½ tsp red pepper flakes (for heat)
- 1 tbsp Worcestershire sauce (for extra umami)
- 2 tbsp fresh parsley (for garnish)
Prepare the Steak
Pat the steak cubes dry with a paper towel (this ensures a better sear).
Season generously with salt, black pepper, and paprika.
Sear the Steak Bites
Heat a large skillet (cast iron works best) over medium-high heat.
Add 1 tbsp olive oil and 1 tbsp butter.
Once hot, add the steak bites in a single layer (avoid overcrowding).
Sear for 2-3 minutes per side until browned (medium-rare to medium doneness).
Remove steak bites and set aside.
Make the Garlic Butter Sauce
In the same skillet, reduce heat to medium.
Add remaining 2 tbsp butter and minced garlic. Sauté for 30 seconds until fragrant.
Optional: Add rosemary, thyme, or red pepper flakes for extra flavor.
Combine & Serve
Return the steak bites to the skillet and toss in the garlic butter sauce.
Cook for 1 more minute to coat evenly.
