Ingredients
  

Main Ingredients:

  • 1.5 lbs sirloin steak (or ribeye, flank steak) – cut into 1-inch cubes
  • 3 tbsp butter (unsalted)
  • 2 tbsp olive oil (or avocado oil)
  • 4 garlic cloves (minced)
  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper
  • ½ tsp paprika (smoked or regular)

Optional Add-Ins:

  • 1 tbsp fresh rosemary or thyme (chopped)
  • ½ tsp red pepper flakes (for heat)
  • 1 tbsp Worcestershire sauce (for extra umami)
  • 2 tbsp fresh parsley (for garnish)

Instructions
 

Prepare the Steak

  • Pat the steak cubes dry with a paper towel (this ensures a better sear).
  • Season generously with salt, black pepper, and paprika.

Sear the Steak Bites

  • Heat a large skillet (cast iron works best) over medium-high heat.
  • Add 1 tbsp olive oil and 1 tbsp butter.
  • Once hot, add the steak bites in a single layer (avoid overcrowding).
  • Sear for 2-3 minutes per side until browned (medium-rare to medium doneness).
  • Remove steak bites and set aside.

 Make the Garlic Butter Sauce

  • In the same skillet, reduce heat to medium.
  • Add remaining 2 tbsp butter and minced garlic. Sauté for 30 seconds until fragrant.
  • Optional: Add rosemary, thyme, or red pepper flakes for extra flavor.

Combine & Serve

  • Return the steak bites to the skillet and toss in the garlic butter sauce.
  • Cook for 1 more minute to coat evenly.
  • Garnish with fresh parsley and a squeeze of lemon (optional).
