- 1 kg mutton cut into medium-sized pieces
- 3 tablespoons oil (vegetable or mustard oil)
- 2 large onions finely chopped
- 2 tomatoes pureed
- 2 tablespoons ginger-garlic paste
- 2 green chilies slit
- 1 cup yogurt, whisked
- 1 teaspoon turmeric powder
- 1 tablespoon red chili powder
- 2 teaspoons coriander powder
- 1 teaspoon cumin powder
- 1 teaspoon garam masala
- 2-3 bay leaves
- 4-5 cloves
- 2-3 green cardamom pods
- 1 cinnamon stick
- Salt to taste
- Fresh coriander leaves, chopped, for garnish

Marinate the Mutton: In a large bowl, combine the mutton pieces, yogurt, half of the ginger-garlic paste, turmeric powder, red chili powder, and salt. Mix well to coat the mutton pieces evenly. Cover and let it marinate for at least 2 hours, or preferably overnight in the refrigerator. Prepare the Base: Heat oil in a large, heavy-bottomed pot over medium heat. Add bay leaves, cloves, cardamom pods, and the cinnamon stick. Sauté for a minute until fragrant. Add the finely chopped onions and cook until they turn golden brown. This step is crucial as it forms the base of your curry and adds depth of flavor. Build the Flavor:Add the remaining ginger-garlic paste and sauté for another 2-3 minutes until the raw smell disappears.Stir in the tomato puree and green chilies. Cook until the oil starts to separate from the mixture. Spice it Up:Add coriander powder, cumin powder, and a pinch of salt. Mix well and cook the masala until it thickens and releases oil. Cooking the Mutton:Add the marinated mutton pieces to the pot.
